This recipe may very well be the easiest thing I’ve ever made. Seriously! If you enjoy coconut, this recipe for Coconut Butter Cups is for you.
Today’s post isn’t going to be a long one. My house is in major disaster zone so I need to tend to that task today but I wanted to get this recipe for my Coconut Butter Cups out to you in the event you’d like to give them a go today!
The only ingredient you really need is (you guessed it) coconut. Unsweetened, finely shredded coconut. Oh, and a good blender or food processor.
I used my NutriBullet Pro 900 Series (because it rocks) but you can use whatever appliance you have in your kitchen that is similar to a blender.
Coconut Butter Cups
2 cups of unsweetened, shredded coconut
Pulse until you reach a thick, liquidy consistency. Mine took about one minute in the Nutribullet.
Depending on your appliance, you may have to clear down the sides of the mixer once or twice.
I added the caviar from one vanilla bean at the very end and mixed in about 1 tblsp of honey for a bit of sweetness. You could use stevia or maple syrup as well to taste.
I poured them into cupcake liners and placed them in the fridge for 30 minutes.
Enjoying one as we speak with a bit of pineapple and a fresh cup of coffee!

Why not add a bit of dried pineapple flakes to the coconut butter in the food processor when it close to finished processing? Very interesting and simple (I really like simple) recipe.
