They said that today is the hottest day of the year so far so I pulled out my silicone mini-donut moulds and started preparing some Coconut Flour Microwave Donuts. They are delicious and simple and are ready in a flash. I added some Cinnamon Glaze on top and these little bad-boys are ready to go for dessert tonight.
You could absolutely do these in your oven if you’re opposed to using your microwave and they would brown up nicely but they are just as tasty in the microwave so I hope you’ll give them a whirl!
We’ll start with the batter…
Coconut Flour Microwave Donuts With Cinnamon Glaze
2 large eggs
2 tblsp butter (melted)
1/4 cup whole milk
1/4 cup brown rice syrup (or your can sub raw honey or grade b maple syrup if you follow a paleo lifestyle)
1 tsp cider vinegar
1/2 tsp vanilla bean powder
1/4 cup coconut flour
1/2 tsp baking powder
pinch of salt
Mix all ingredients together until well-blended.
In a pastry bag, pipe your batter into your moulds. For each donut, I set my timer on my microwave to 50 seconds.
Remove from microwave and let them cool for several minutes.
and for your cinnamon glaze…
1/4 cup of brown rice syrup (or you can use raw honey)
1 tblsp almond butter
1 scant tsp of cinnamon
splash of vanilla extract
Blend above ingredients in a bowl, place in microwave for 8-10 seconds until warm.
Drop each donut in your glaze until the tops are covered.
