Most of you know that I’m not a huge fan of The Avocado (mostly because of the texture of them) so I’m always looking for ways to eat them without actually eating them…does that make sense? I know they are a great source of fat and are loaded with nutrients so I use them a fair amount in my recipes these days.
This pudding takes me less than 5 minutes to whip up and it is amazingly delish! Even without the sugar 🙂
I find that a small serving does the trick (for me anyhow) so I generally pipe the pudding into a tiny ramekin or something similar.
Easy Chocolate Avocado Pudding
2 tblsp cocoa powder
2 tblsp brown rice syrup
1/4 tsp stevia
Mix all of the ingredients in your blender or food processor until creamy.
P.S. I would have to think that as an add-on, a bit of cinnamon or chili powder would also be nice in this mixture!
