I don’t know about you but making lunches for the kids is a task I rarely enjoy. And now that I have quit sugar, I’m always looking for great ways to introduce some easy yet healthier options for the kids lunches.
My 3 boys (ages 4 through 9) really enjoy their baked goods so I’ve been experimenting quite a bit lately to find out what works for the wee ones and what absolutely doesn’t. You see, they are (and always have been) my taste-testers. Kids make great taste-testers because they will give you the honest-to-goodness truth no matter what.
They just love hanging out in the kitchen while Mom is baking up something yummy! Do your kids do that too?
I’ve finally come up with a winner with this recipe for easy sugar-free mini banana muffins. I may or may not have told them there is no sugar in them. tee! hee!.
In addition, one of the best purchases I’ve ever made has been my mini muffin tin. I don’t know…they just like them bite-size. Truth told, I kinda think they’re fun too.
So, as promised, here is that recipe for those of you who are looking for an easy option for your kiddo’s lunch:
Easy Mini Sugar-Free Banana Muffins
1/2 cup Almond Flour
1/2 cup Coconut Flour
1 T ground flax seed
1/2 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. cinnamon
1/2 tsp. nutmeg
pinch of salt
2 mashed bananas
2 large eggs
2 T brown rice syrup
1 T coconut oil – you’ll want to heat the oil in the microwave for a few seconds until it is liquidy
1/2 tsp. vanilla powder
Preheat your oven to 375
Mix dry ingredients in your bowl first and add your wet ingredients to that mixture.
Combine and place in mini muffins tins.
Bake for 20-23 minutes or until done.
Enjoy with a dab of butter.
Can be frozen in individual baggies. Pop the frozen ones in the lunchbox in the morning and they are thawed by snack time.
