I’ve been on the verge of testing out a Paleo-ish way of living. Since quitting sugar, it seems like a natural transition (for me anyhow). I’ve been doing quite a fair amount of reading up on the topic of eating like our ancestors. Actually, the only drawback I’m finding, for my lifestyle, is cutting out the dairy completely. That really doesn’t work for me or my family. So, if I decide to give this a go, I will be eating dairy.
This morning, I decided to prepare some Chocolate Pancakes, Paleo-Style. I adapted a recipe from the Atkins Diet and voila…the best darned Paleo Chocolate Pancakes this side of Ottawa.
I topped mine off with some fresh organic strawberries and a dollop of Grade B Maple Syrup. So good!
4 eggs (separated)
4 oz. cream cheese
4 tblsp Grade B Maple Syrup
1 tsp baking powder
2 tsp cocoa powder
Separate your eggs. Whites in one bowl and yolks in the other.
Whip your whites first until they form into stiff peaks. Add your baking powder and sifted cocoa powder at the end to this mixture.
With your same mixer, beat the yolks, cream cheese and maple syrup until creamy.
Fold yolk mixture into egg white mixture.
Drop 2 or 3 large tablespoons of mixture onto baking sheet lined with parchment paper. You may need two baking sheets.
Bake for 28-30 minutes in a 300 oven.
Top with your favorite fruit and syrup and enjoy!
