After numerous attempts of trying to make a sugar-free brownie that tastes amazing, I finally got it! If you’re in the process of quitting sugar (or already have), this tempting little treat is bound to satisfy that chocolate craving in a big, healthy way!
I likely could have gobbled up the entire pan last night but the kids got into them and that was that.
1/2 c. coconut oil (softened)
1/2 tsp. ground cinnamon
1/2 c. cocoa powder
1/2 c. coconut milk
2 tblsp. brown rice syrup
1 large egg
1 c. almond flour
Mix first 6 ingredients well until you get a smooth chocolate-like consistency.
Add almond flour and stir until blended.
Line a piece of parchment paper on bottom of a loaf pan.
Add the mixture.
Bake in a 325 oven for 20-25 minutes or until the brownie is springy to the touch.
Cool in the fridge for 30 minutes.
Slice and sift powdered stevia overtop of the brownies.
