Make Sugar-Free Lemon Avocado Muffins of course!
I get pretty excited about lemons. But avocados, not so much. Chances are you already know of the many ways you can use avocados but recently I’ve discovered that you can also use them to replace butter in recipes. Did you know that?
So, I set out to create a recipe for some sugar-free lemon and avocado muffins the other day. It took me a couple of tries to get this one right. I blew the top off my blender and had muffin mix everywhere. This was one moment where I was happy to not get invited on the Rachel Ray show. That would have been, well…awkward!
I was bound and determined to get this perfect. After numerous attempts, a star was born!
Without further delay, here’s the recipe that made the final cut:
Sugar-Free Lemon Avocado Muffins
Mix the following ingredients in your blender. I use my Nutribullet for such an event!
1 whole lemon *cut into 8 pieces, remove the seeds (leave the skin on for a super-lemony flavour)
3 eggs (beaten)
2 tblsp of avocado (mashed)
2 tblsp of coconut milk
2 tblsp of brown rice syrup (or you could use maple syrup or honey)
1/2 tsp vanilla bean powder
In a bowl combine:
1/4 cup coconut flour
1/4 tsp baking powder
pinch and a half of salt
1/4 cup of stevia or dextrose
Add dry ingredient to wet ingredients and mix well.
Pour into greased muffin tins or liners.
Bake for 18-10 minutes at 350.
Makes 10-12 small muffins.
