Butter Tart Squares There’s nothing better on this earth than a deliciously gooey Butter Tart. You know, the kind that you absolutely need a plate to eat it. Ya that!

There was a lady in my hometown who made the most excellent Butter Tarts. I have fond memories of being at the local Curling Club and hoping that she would be there, armed with her delicious tarts.

Yes, I am a Curler. Betcha didn’t know that about me, huh?

Anyhow, this is my twist on a Butter Tart. Only, it’s not a tart. It has a shortbread-like crust and is totally not runny. But, it is delicious!

Butter Tart Squares

Ingredients:
  • Crust:
  • 1 cup Butter
  • 2 cups Flour
  • 1/4 cup Dextrose Sugar
  • 1/4 teaspoon Salt
  • Filling:
  • 1/4 cup Butter
  • 3 Beaten Eggs
  • 2 cups Brown Sugar
  • 1 tablespoon Baking Powder
  • 1/4 teaspoon Salt
  • 1/2 cup Shredded Coconut
  • 1 teaspoon Organic Vanilla Extract
  • 1 tablespoon Flour
  • 1/2 cup Chopped Walnuts
Instructions:
  1. Crust: Cut butter into dry ingredients with a pastry cutter or a fork (or even your fingers) until crumbly. Press into an ungreased 8 x 8″ pan.
  2. Filling: Melt butter. Add eggs and remaining ingredients. Mix and pour over crust.
  3. Bake at 350 for 30 minutes.
  4. Cool and slice.
