There’s nothing better on this earth than a deliciously gooey Butter Tart. You know, the kind that you absolutely need a plate to eat it. Ya that!
There was a lady in my hometown who made the most excellent Butter Tarts. I have fond memories of being at the local Curling Club and hoping that she would be there, armed with her delicious tarts.
Yes, I am a Curler. Betcha didn’t know that about me, huh?
Anyhow, this is my twist on a Butter Tart. Only, it’s not a tart. It has a shortbread-like crust and is totally not runny. But, it is delicious!

- Crust:
- 1 cup Butter
- 2 cups Flour
- 1/4 cup Dextrose
Sugar
- 1/4 teaspoon Salt
- Filling:
- 1/4 cup Butter
- 3 Beaten Eggs
- 2 cups Brown Sugar
- 1 tablespoon Baking Powder
- 1/4 teaspoon Salt
- 1/2 cup Shredded Coconut
- 1 teaspoon Organic Vanilla Extract
- 1 tablespoon Flour
- 1/2 cup Chopped Walnuts
- Crust: Cut butter into dry ingredients with a pastry cutter or a fork (or even your fingers) until crumbly. Press into an ungreased 8 x 8″ pan.
- Filling: Melt butter. Add eggs and remaining ingredients. Mix and pour over crust.
- Bake at 350 for 30 minutes.
- Cool and slice.
