As promised, I wanted to get this post out today for the Mini Meatloaf recipe that I make with my Sugar-Free Ketchup!
I really wanted to get some good shots of the Mini Meatloafs today but to my surprise, hubby took them all in his lunch today. Sheesh! So, these pics will have to do until another batch is made and I can get some better shots. Oh well…next time.
Mini Meatloaf Recipe
1 lb. ground beef
1 cup of milk
6-8 crushed soup crackers (non-salted type)
salt & pepper to taste
– Gently mix together with fingers until well-blended
– Scoop into muffin tins or small loaf tins and firmly press down
– Use the long end of a wooden spoon to imprint a hole in the center of the patties
3 tblsp. sugar-free ketchup
1/4 c. of water or until mixture is runny
Pour sauce over the mini-meatloaf (but don’t overfill them…just enough to cover)
Bake for 20-30 minutes at 375 degrees
Remove the last few minutes and add a tsp of grated cheese to melt over the top and place back in the oven for 5 minutes.
Serve with your fave veggies. These are also good for kids lunches (mine like them cold).
You can also add a tsp of taco seasoning to the meat mixture and voila, you have taco mini meatloaf!
