Sunday’s are a perfect day to plan for the week ahead. And as you may know, making lunches is my least favorite part of of the school year. I’ve been testing out some recipes that I can make in my Nutribullet (and only my Nutribullet). Today I created a wonderfully delicious and sugar-free, Orange Mini Loaf recipe. I know when I’ve hit on something good when the hubby wants to try it 🙂
I suspect this recipe would go nicely with walnuts but since I’m making these for the kids’ lunchboxes, I’m unable to throw any into the mix.
No need for a bowl or a spoon of any sorts. Just take out your blender and grease up your muffin tins or mini loaf tins and pour. So easy!
Sugar-Free Orange Mini Loaves
2 small oranges (peel and all) cut into quarters
1 large egg
1/4 cup of extra virgin olive oil
Blend and then add the following:
1.5 cups of almond flour
3/4 cups of dextrose or stevia
1 tsp baking powder
1 tsp baking soda
1 tsp salt
Pour into your mini loaf pan or muffin tins.
Bake for 15 minutes at 375.
Makes 8 mini loaves.
*These can be individually wrapped and frozen*
