I know you’re likely thinking, gee, she sure takes alot of pictures with her wine/margarita glasses, she must drink alot! Well, I may but that’s a whole other story 🙂
Today, I wanted to share this little gem of a recipe with you if you’re looking for a super-easy dip for fruits, veggies (or just about anything). It doesn’t contain any refined sugar so you’re good to go on that front. You won’t likely taste the sweet potato if we have similar taste buds and I find this dip tastes more like pumpkin cheesecake. The kids will never know there is a sweet potato in there!
Really, give this dip a go this weekend. It’s a cinch to make and I can’t begin to tell you how dreamy it tastes.
Sweet Potato Cheesecake Dip
1 small sweet potato (baked and mashed)
4 oz cream cheese
1 tsp cinnamon
1/2 tsp vanilla bean powder
2 tsp raw honey (or, substitute with maple syrup, stevia or dextrose)
Blend all ingredients together in your food processor or something similar. I used my NutriBullet.
Serve with fruit, veggies or crackers of your choice.
